Dear Loves,

Mornings...
Oh, sweet mornings... they are all kinds and different ones... but my all time favorite ones are the mornings when we all home and we share those rare moments of being together and not in a rush for work or school... I love those lazy brunches because on the end of the day - who will want to wake up early for breakfast when we can be lazy cats and sleep late and get up almost for lunch and instead of having lunch we make heart shaped pancakes instead....
Here in America is easy...You can buy everything you need for the American pancakes in a single pancake mix box and you are good to go and set up for successful breakfast, the only extra ingredients you have to add to the mix usually are - eggs, water/milk and oil, which one you will need depends on the brand mix you have. Some brands use all three of them, some just cups of water.
Back home in Bulgaria we make our crepes/ palachinki - палачинки from scratch. If you want to try and make them, here is a basic recipe that I have...
Ingredients:

3 eggs
250 g. (2 cups) all - purpose flour
350 ml. (1 1/4 cups) milk
1 cup water
pinch of salt
2 tablespoons oil /sunflower/
2 tablespoons unsalted butter for greasing the pan
Directions:
Beat the eggs using wisk or hand mixer until you get a thick homogeneous mixture, add milk and oil and continue to mix. After that pour the flour stirring constantly, until all is mixed well and then add the salt. If the mixture seems thick, dilute it with little bit water. Let the pancake batter stay for 2-3 minutes and after that fry pancakes in a well-heated pan with unsalted butter (which I personally prefer) or oil. Stack the ready pancakes on a plate and cover them until all of the batter is used, that way they will stay warm.
Before I finish this post I want to share a memory of mine with you my darlings -
When I was little probably : 2 or 3 years older, every time when grandma Yovka asked me what I want to have for breakfast, my answer always was the same - papachinki ( palachinki - палачинки ), and sweet mama always made them from scratch, every single time...( God, I love her so much for doing those little things for me)...Thank you, mama!! You will always be my hero and my Super Mama. I wish I'm a great mama as you....❤️
Never forget to have fun while you making food for your family ...be creative, experiment and be bold and fearless too ....even if the food don't turn the way you wanted and expected ....well there is always Krispy Kreme or Dunkin Donuts shop around the corner that will help with the mission of feeding hungry little ones...
